The drops
What is a "drop"?
A drop is one limited release of boxes — usually twenty. We open reservations, and when enough people are in, we confirm the drop and get the animal cut. When the boxes are gone, they're gone until the next one.
How does confirmation work?
Every drop has a minimum (e.g. 15 boxes). Reserve your box with a £50 deposit. If the drop reaches its minimum by the closing date, it's confirmed — we email you, book the butcher, and collect the balance before dispatch.
What if the minimum isn't reached?
Then the drop doesn't happen, and every deposit is refunded in full, automatically. You risk nothing by reserving early — in fact reserving early is what gets a drop over the line.
The meat
What does buffalo taste like?
Like very good beef, but leaner and a little sweeter, with no gaminess. Water buffalo is lower in fat and cholesterol than beef and higher in protein and iron. If you like a proper steak, you'll love it.
How should I cook it?
Because it's lean, treat it gently: steaks a touch rarer than you would beef and rested well; slow, low cooking for the casserole and roasting cuts. Every box comes with simple guidance. Don't overcook it — that's the only real rule.
Why do the weights vary?
Because it's a real animal, not a factory product. Stated weights are targets; your actual box may vary by up to ±10%. Your account shows your box's real packed weight before it's dispatched.
Delivery & collection
How does delivery work?
Choose insulated frozen courier (a flat delivery charge, shown at checkout) or free farm-gate collection during the stated window. Boxes arrive frozen — get them into a freezer promptly.
When will I get my box?
Each drop states its delivery window up front (usually a few weeks after the drop closes, once the meat is aged and cut). We email you before dispatch.
Payments
How does the deposit work?
A £50 deposit reserves your box. It's fully refundable until the drop is confirmed. After that it's non-refundable, because it covers the animal and butchery we commit to on your behalf.
How does the balance get paid?
When your drop is confirmed, we save your card and collect the remaining balance automatically about three days before dispatch — and we email you three days before we do, so there are no surprises. You can update your card any time from your account.
Refunds
What can I get refunded, and when?
